  • Use coffee roasted for filter methods (light or sometimes medium roast) suitable for filter, cezve, cup, or French press brewing to maximize the extraction of flavors and aromas.
  • Select high-quality Specialty Coffee, grown according to high standards, with an interesting origin story, offering balanced taste and superior quality.
  • The coffee grind should be medium or medium-fine (like sugar) to ensure optimal extraction.

Coffee and Water Ratios

  • Use 11-14 grams of coffee per 200 ml of water to ensure a harmonious taste.
  • Adjust the amount of coffee based on the desired taste: more coffee for a richer flavor, less coffee for a milder taste.

Water Temperature

  • The water temperature should be between 92-96°C for proper extraction.
  • Too high a temperature can cause bitterness, while too low will not fully develop the flavor profile.

Brewing Process

  • Even water pouring: evenly moisten all the coffee grounds for better extraction.
  • Brewing time: aim for 4 minutes for a balanced flavor.
  • Stir the top crust to evenly extract flavors.
  • Remove any residues (grounds, foam) for a clean brew.

Tasting

Aroma

  • Evaluate the coffee's aroma after it cools. Aromas can be fruity, floral, chocolaty, or spicy.

First Sip

  • Acidity: assess the light fruity or floral notes.
  • Sweetness: the natural sweetness with honey or caramel notes is essential for the flavor profile.

Second Sip

  • Bitterness: ideally, the coffee should not be overly bitter.
  • Body: assess the coffee's body, typically medium or light.

Taste Adjustment

  • To reduce acidity, increase brewing time or use less coffee.
  • To lessen bitterness, decrease the amount of coffee or brewing time.
  • Adjust water temperature or the coffee-to-water ratio to achieve the desired balance.

  • Acidity: 4

  • Bitterness: 2
  • Body: 3

Liked: Light fruity aroma with a pleasant acidity. Would be better if the sweetness were more pronounced.

Disliked: The coffee had too light a body, so next time we will try increasing the amount of coffee for a richer flavor.
